on our plates

The weather hasn't been the nicest and we're spending lots of time at home so I've been trying some recipes from pinterest and other blogs, the easiest of course since I'm not very good at the kitchen to be honest, I try though and I'm so lucky to have a "chef husband" (he is not really a chef but he cooks incredible!) Sometimes I just find the recipes and he takes care of the rest, such great team we are!
We don't always follow the exact recipe, we use it as an inspiration and go from there. Here four of our favourite so far (that we've tried and succeed):
for breakfast: Banana Nutella & Oatmeal Buttermilk Pancakes
Perfect for a sunday morning paired with a glass of milk. I used brown sugar instead of granulated and it turned out great. Recipe found here.
for lunch: Spinach, Cheese & Onion Stuffed Chicken Breast
based on this recipe, I was afraid the stuffing was going to come out so the husband suggested to wrap it in bacon of course so at the end it wasn't as healthy but it tasted awesome!
for dinner: Huevos Ahogados
I recently shared this recipe of Eggs in Tomato Salsa with Roasted Poblano Strips, we also added some refried beans with cheese and avocado slices, it was delicious! We love to eat breakfast food for dinner.
